You like fancy fruity cookies? Then the jam biscuits are just the right thing for you!
- 230 g spelt wholemeal flour
- 50g castor sugar
- ½ tsp. baking powder
- 40g ground hazelnuts
- 125 g sunflower margarine
- 2 - 3 tbsp. soy milk
- 1 pinch of ground cinnamon and cloves
- about 100 g currant jam (or some other red jam)
- icing sugar for sprinkle
First mix the flour, sugar, baking powder, and hazelnuts. Then add the margarine, soy milk, and spices while kneading. Wrap the dough in foil and refrigerate for about one hour.
Roll out the dough. Cut out the cookies. Thereby cut one normal cookie for the floor and one with a hole for the top.
Preheat the oven and bake at for 10 - 12 minutes with about 180 °C (top / bottom heat). Then let the cookies cool down. While this heat the currant jam in a pot. Add the liquid marmalade at the cookies without a hole and then place the cookie with hole. Sprinkle the finished cookies with powdered sugar.
